Light Rum

Heavy Rum
Heavy (or high ester) Rum is known for a robust flavour and aroma. Originally produced for blending, the drink’s unique style has become popular among connoisseurs. It is widely used in cocktails and mixed drinks, and also a common ingredient in the flavour and fragrance industries.
Esters are organic compounds that add a fruity, floral depth to many types of alcohol. Produced during the fermentation process, they are influenced by a range of factors such as yeast type, temperature, length of fermentation, and type of still. Heavy / high ester Rums can be fruity, spicy, earthy, or even cheesy, with a powerful, intense character that sets them apart.
Aged Rum
Aged Rum is a premium spirit beloved by connoisseurs and casual drinkers alike. It is produced by fermenting sugarcane juice or molasses, distilling the liquid, then ageing it in barrels made from woods such as American or French oak, or even sherry casks.
The ageing process can vary from a few years to decades. Over time, the Rum absorbs the characteristics of the oak barrels, which impart notes of vanilla, caramel, and spice. It will also mellow out, while taking on a darker colour from the wood. The result is a rich and complex flavour that is fast becoming a popular alternative to fine whiskeys and bourbons.
